Always remember, the less the food is processed, the easier the body will "recognize" it. I would always suggest to eat a lot of raw food, especially fruits.
1. Enzymes are not destroyed by heat, so digesting is soooo much easier.
2. It forces you to chew more, which is the best you can do for your body, as this chewing action already "distructures" a lot of food in your mouth, activates the digesting acids and is simply... an enjoyment for the taste cells.
3. The more heat, the more the molecular structure will be changed. At 90°Celsius, you can say that the "original" structure no longer is maintened. The food went into a state that nobody can tell what it is. The body neither.
4. By eating raw, you will have more proteins, more vitamins in your food, compared to heated food. As a result, you don't have to eat as much as you would for processed food. And it is more "eco" friendly, as you use less energy for consumption.
Anyway, in cold winter days, like we have here in Alsace, I suggest to introduce warm food, and warm liquides (green tea just seems perfect in this way).
I also suggest you buy this plastic germ devices with 3 levels, where you can VERY easily produce your own sprouts. The germination process produces A LOT of vitamins. You would be surprised some "sprout" meal is very satisfying and how quickly you feel no more hungry. Simply a magic meal : easy, quick to prepare, VERY cheap, and yummy. I particularly recommend alfalfa sprouts. They have all the amino acids you need.
I have been vegetarian for my whole life, vegan since about 5 to 6 years and raw vegan for quite the same period. I do a lot of sports and just can tell how good this diet is for my energy in general. Which is another point : sport is very recommended. If forces your muscle to react and build a very healthy structure around the bones, which get more nutritives. Very good for later to avoid osteoporosis and such nightmares.
Good luck for you new vegan life !

Power and Light in your life!
When it comes to diet, my father always told me that my diet is what I am physically made out of, my base materials, and also that I can control what materials are utilized. Vegetables and fruits are organic and fractal in their composition which I believe and feel inform my own structure in a different way than via ingestion and osmotic kinds of filtering by digestion.
When I think about the animal growing I realize that the animal eats either 1) vegetabes, plants, leaves, grasses etc... or smaller animals or insects which eat plants, vegetables etc. When I eat the animal I commune with the spirit and life of that animal and it infuses with my own. If it has been tortured or holocost treated or just fed hormones and allowed to graze stupidly in the fields ... it has become a processing machine for another beings profit. Eating this is a validation of the system it is a small part of to a degree. When we take it into our bodies without consciously addressing the meat bodies experience we adopt it subconsciously.
This is why I do not eat animals often or without recognition of where they come from and where they are going to. Fruits are grown in the hopes that they will be eaten. Vegetables are eaten by all living things and do not scream or run away when they know they are to be eaten. I do believe how we treat them in their lifetimes informs their structure and energetic food they grow from. So its best to eat plants that are loved because we then become what we eat?
Or so the saying goes...
Thank you for the request for friendship.
May your life blossom into the stars while you dance beneath the moon
In terms of trying to maintain the diet...remember it is a way of life. With vegan/vegetarian, or even raw food eating...it is an awareness that life, animals, nature all deserve our deepest respect. When we extend this respect, we in turn, choose only to eat those things that bring life...rather than aid in eliminating it-such as eating meat, etc.
See in the eyes of an animal a soul, and you will realize the importance of love in the deepest of forms.
Best wishes and stay in touch with your journey-
J & K, Raw Soul
