My wife and I are trying to work our schedules to attend, but space is limited so if you are in Colorado you should really attend this class. Cocunet Ice Cream (modified)

Pineapple Carpaccio
with star anise syrup and coconut ice cream

1 1/2 cups of coconut meat
1 1/2 cups of coconut water
(The above can be organic coconut in the cans if you cannot get young thai coconuts)
1/2 cup agave nectar
2 TBSP coconut butter
1 TSP lime juice (I like more but just in case you should try it this way.)

Don't know where I came across this recipie but I have made some small
changes that bring out even better flavor. The only thing that I have
been meaning to try is to add some apple sauce to the mix and make it
into a cake pan. However either way you do this it will taste great.

Pecan Ice Cream

My wife and I just tried this and it was amazing although I would suggest playing with the water a little to ensure you get the consistancy that you need.

Pecan Ice Cream

2 Cups of Pecans (soaked)
3 Cups filtered Water (Makes the Ice Cream Creamer)
1 Cup packed pitted dates
2 TBSP Lecithin
1/2 salt
1 TSP Vanilla

Golden Goddess Dressing

Golden Goddess Dressing

1/2 C organic cold-pressed flax oil
1/4 C fresh-squeezed lemon juice
1/4 C water
1-2 dates (soft kind like honey, khadrawi, barhi)
1/2 C fresh cilantro
2 TB Shoyu
1 tsp sea salt
1 Garlic clove

Blend everything together in a blender. Stores for only 2-3 days in the fridge

  • 1 pound frozen phyllo sheets

  • 1 cup melted vegan butter

  • 2 cups finely chopped walnuts

  • 1/2 cup sugar

  • 1/2 teaspoon ground cinnamon

  • 3/4 cup sugar

  • 3/4 cup Agave

  • 1 cup water

  • 1 Tablespoon of Rose Water

  • 1 tablespoon lemon juice

  • 1 x 9 inch / 23 cm round whole wheat loaf of bread

  • 1/3 cup prepared pesto

  • 2 T balsamic vinegar

  • 1/4 cup kalamata olives, pitted and chopped finely

Welcome to Monday! Here is a wonderful soup for those of us in cold climates!



Greek Split Pea Soup


INGREDIENTS:



  • 2 garlic cloves, minced

  • 1 cup diced white onion

  • 1 bay leaf

  • 2 14.5 ounce cans vegetable broth

  • 1 cup pasta shells

Modified Benevolent Buckwheat/Spelt Pancakes

This reciepe was adapted from the "Vegan Fusion" cook book that I picked up in Wholefoods Market Fort Collins. This is a family favorite and a staple as we make double batches to last the entire week.
